in the vineyard : Planted in 2007, the vines are trellised on vertical systems, with sufficient sunlight penetrating into canopies. Both vineyards receive supplementary irrigation during the growing season.

about the harvest: The Grenache and Carignan grapes, hand-picked early in the morning, were sourced from vineyards situated at the Nederburg farm in Paarl.

in the cellar : The grapes were harvested by hand at 21º Balling during February. The clear juice was fermented dry in temperature-controlled stainless-steel tanks for a period of two weeks at 15ºC. Minimal skin contact was allowed.
