in the vineyard : 12 year-old vines made up of 40% bush vines and 60% Extended Perold. An average of about 230m to 300m above sea level. Mainly Duplex and Hutton soil. Removal of green bunches one week after veraison.

in the cellar : Hand picked at 25Â°B. 48 hour cold soaking prior to fermentation. Skins punched through 3 x daily. Fermented at 29Â°B. Skins pressed at 6Â°B. Aged for 12 months in 2nd fill French oak barrels.
