in the cellar : The first wine bottled under the Verdun label is an exciting Chenin Blanc. This is a fragrant, spicy Cape Chenin with finesse, roundness and a touch of seriousness. The two separate components, which make up this wine are a 42% oak fermented portion and a 58% tank fermented portion. Each of these two components was taken from differing blocks having a varied terrier and different clones.
During the first 3 weeks of fermentation battonage was practiced twice a week. For the ensuing 12 weeks battonage was practiced once a week. The wine was then left in the wood for a further 3 weeks.
