Protea Sauvignon Blanc 2021

Gentle lemon and passionfruit with a hint of floral verbena notes on the nose. Energetic, lively and yet easily approachable, the palate is fresh and juicy with expressive lime and citrus tang. Bright and zesty, there is good acidity which is well balanced with ripe fruit flavour packed with passionfruit and lime. Medium-bodied, the wine is accessible and enjoyable. Ideal for summer.

about the harvest: Each vineyard was harvested separately by hand in the cool early morning hours to capture the freshest flavours. The fruit was de-stemmed, crushed, And given overnight skin contact prior to being drained and pressed the following day. A two-day settling period followed before the individual parcels were fermented separately with a selection of cultured yeast strains. After fermentation, the wine was allowed to spend time on the lees in order to develop a full, well-rounded palate before being blended and bottled.
