ageing : Drinks well now, but will improve with 4 to 20 years in the bottle.

in the vineyard : The 2000 Cyril Back Shiraz is produced from grapes that were grown on a number of different blocks at Fairview. A hillside block on decomposed granite and a low yielding vineyard on sandy valley floor soils. Yields of Shiraz are kept to less that 7 tons/ha.

in the cellar : The grapes were destemmed and very lightly crushed. Rhone yeasts were used for fermentation. Malolactic for some of this wine was completed in tank with the remainder in barrel; the wine was racked and sent to barrel for 14 months. Wine from both French and American oak barrels were selected for this wine.
