Carl Everson Classic Red 2000

This wine, named after Stanley Louw's grandfather, is a blend made from three noble red varietals. Deep red, with characteristic Pinotage flavours that are complemented well by the berry flavours of the full-ripe Ruby Cabernet.
A wine that demands to be enjoyed while still young.

ageing : Very fruity wine - strong but soft tannins. 3 - 5 years - not more.

in the cellar : The Pinotage, Ruby Cabernet and Cinsaut were all harvested and fermented separately with WE 372 yeast. After malolactic fermentation the blending process took place.
The Ruby Cabernet was initially the only cultivar that was oaked, but after the three cultivars were blended together they spent another 6 months in french oak barrels.
The wine was bottled toward the end of January 2001.
