Genesis Cabernet Sauvignon 2001

Deep red with inky hue. Powerful aromas of liquorice, mint, plums, blackberry and cinnamon. Ripe cassis and chocolate flavours all the way through the palate, with fine soft tannins, and a long mint and chocolate finish.

Homemade venison “bangers” with a roast garlic mash – combines beautifully with the “cut” of the youthful berry characters.

ageing : This wine will develop beautifully in the next 5 to 10 years.
in the vineyard : Conditions during the initial flowering and fruit set were sunny and dry. The combination of wind and drought led to smaller berries, which is ideal for a good grape flavour concentration. The summer was characterized by a few sudden heat waves and high average temperatures, but the vineyards were blessed with afternoon cooling sea breezes from the Atlantic Ocean and vines remained healthy and active until the end of the season. This Cabernet Sauvignon, had great concentrated colour and flavour and high extract.
about the harvest: Grapes were picked at high sugar levels, and high alcohols are the order of the day.
in the cellar : Oak maturation: 15 Months in 300L French barrels, of which 30% were new barrels.
