in the vineyard : The Chardonnay grapes (single block vineyard: â€˜Jackâ€™s Vineyardâ€™) grown on cool southern slopes were handpicked in the early morning hours to retain freshness and flavour.

in the cellar : Handcrafted Method Cap Classique. The second fermentation takes place in the bottle, after which three years of silent maturation on the lees in the dark underground cellar follows. The bottles were placed at 45 degrees with the heads downwards and turned daily for the yeast to settle in the neck before degorgement. A special liqueur was used to sweeten the sparkling wine slightly and to top it up.
