in the vineyard : Vineyard: Only grapes from the vineyard of Danie du Toit were used for this wine. Eastern facing slopes situated at the foot of Kasteelberg with moderate growth, yields and supplementary irrigation ensure the concentration of fruit flavours.
Production: 10 - 12 tons per hectare

about the harvest: The grapes were harvested early February at 24,5° Balling.

in the cellar : Free run juice and a portion press juice was used before adjusting acid and inoculating with selected yeast. Fermentation took place in 50% French and 50% American oak and the wine was left for 6 months on the lees until fined prior to bottling.
