in the vineyard : The soil comprises of decomposed granite. The 7 year old vines are trellised on Hedge and Cottage trellising. They yield 4 -6 tons per hectar. Suplementary overhead irrigation used when necessary. These vines are grown at about 200 meters above sea level.

about the harvest: The grapes were handpicked from own vineyards on 4 March 2002 at 26 to 30 degrees Balling.

in the cellar : Cold soak for 3 days. Open fermentors used with punch downs 4-5 times per day. Fermentation 4 days, pressed at 4 degrees B. Malolactic fermentation in tank.
