Rich old golden colour. Nuts and honey with dried apricots and hints of creme caramel. Rich mouthfilling viscosity on the palate with delicious layers of biscuits and a limestone earthy tone which reminds of Sauvignon Blanc. The subtle French oak influence is in perfect harmony with the seductive sweetness adding just a faint spiciness. A refreshingly crisp acidity gives length of flavour with a clean dry finish.

Normally served with dessert at the end of a gourmet meal, but can also be enjoyed on its own in front of the fire when you want a special treat.

in the vineyard : Frans Malan made his first Noble late Harvest at Simonsig in 1979 when he used Chenin Blanc. The 1979 vintage was characterised by Botrytis developing in many different grape varieties. Pinotage was one of them and to this day it remains the only Noble Late Harvest ever made from Pinotage. Over the years different grape varieties were used like Bukettraube and Rhine Riesling. More recently Simonsig has been making its Noble Late Harvest in a classic drier food friendly style like the famous French Sauterne wines.

about the harvest: The botrytis grapes were picked on 28 April which was a whole two months after the first Semillon was picked.

in the cellar : The noble rot berries were quite dry and had a perfect sugar content of 36º Balling. Overnight skin contact allowed the raisins to swell and release all the concentrated flavour and sugar. Pressing is slow. Very low juice yield of 470 litres per 1000 kg of grapes is quite normal. Slow fermentation was followed by 7 months maturation in French oak.
