in the vineyard : Smart trellising system enables better sunlight penetration and ventilation the low yield gives rise to fruit showing classic elegant chardonnay fruit flavours.

about the harvest: The hand harvested grapes are sorted out prior to being â€œwhole bunch pressedâ€.

in the cellar : The free run juice is chilled to about 8Â° Celsius for 2 days before inoculation. Once fermentation commences a part of the juice will undergo fermentation in French oak (12%new, rest 2nd and 3rd fill 225l barrels). A portion of the wine is kept in stainless steel and used in the final blending for â€œfreshnessâ€.
