A extremely elegant well balanced food wine. Rich in classic Chardonnay flavours (hints of melon and citrus). Well integrated subtle oak makes this a stunning food wine.
Hand picked and sorted Chardonnay grapes are gently whole bunch pressed in a bag press. The juice is allowed to settle overnight before innoculation occurs. Fermentation is done in 225l French Oak barrels (15% new oak). Malolactic fermentation is completed in the barrel and the wine is stabilized prior to bottling ( 8 months in oak). We produce 3300 bottles per year and it is only available from the farm.
