Known as the Masterpiece of Mont Rochelle the Cabernet Sauvignon 1997 is a perfect example of the New World style of red wine-making. The wine is young yet elegant, well-balanced, smooth and highly drinkable.The grapes were hand-picked and fermented on the skins for 14 days with twice daily pump-overs. Malolactic fermentation was completed in the tank before transfer of wine to 225 litre French casks for a further maturation of eight months. This wine follows the highly successful Cabernet Sauvignon 1996 which was a double-gold Veritas winner and was selected as the main course wine by the International Wine & Food Society for their year-end banquet.
