Boschendal The Pavillion Shiraz / Cabernet Sauvignon 2005

This ripe, purple coloured wine has upfront juicy plum and blackberry aromas. The wine is soft and juicy, with friendly tannins and a lingering almost sweet aftertaste.

This is a fun easy-drinking wine and will go well with any pasta and rich tomato sauce, pizza and all other Mediterranean cooking.

in the vineyard : The grapes were picked from a number of vineyards, noted for their expression of fresh fruit and mellow structure. All the vineyards were pruned to two-bud spurs during July to August and excess shoots were removed during October. Only two to three shoots were left per hand-spaced spur. After veráison, which took place between December and January, uneven bunches were removed to allow for better flavour concentration in the wine.

about the harvest: 2005 was a good year for premium quality red wines. Adequate rainfall in 2004 coupled with prolonged fruit maturation ensures wines of complexity and length. The grapes were picked by hand and transported to the cellar in 400 kg bins, to maintain fruit integrity.

in the cellar : Different vineyards were vinified separately. The must was all fermented in stainless steel red wine fermenters and pressed just prior to completion of fermentation to ensure soft tannins. After fermentation the wine was matured briefly in a combination of tank and large oak vats before it was gently filtered, bottled and released.
