Boschendal The Pavillion Shiraz / Cabernet Sauvignon 2008

This friendly wine shows an inviting array of dark red fruit and spice on the nose. Developing into a lively and juicy wine on the palate, filled with black fruit and hints of cracked black pepper.

in the vineyard : Blend: 66% Shiraz & 34 Cabernet Sauvignon.
The grapes were selectively picked from a number of vineyards, noted for their expression of fresh fruit and inviting soft tannin.

about the harvest: The 2008 harvest proved to be quite good after some challenges during the middle to latter parts of March with a number of vineyards ripening in quick succession. The grapes also ripened 5-10 days later than normal, resulting in softer friendlier tannins.

in the cellar : Different vineyards were vinified separately. The must was all fermented in stainless steel red wine fermenters and pressed just prior to completion of fermentation to ensure soft tannins. After fermentation the wine was matured briefly in a combination of oak staves and older barrels were used for maturation, a part of the wine remains in stainless steel vats to ensure freshness in the final blend.
