Waverley Hills Cabernet Sauvignon 2005

The deep maroon centre is complimented with coronations and red cherry tobacco aromas. The wine has a bouquet of roasted Brazilian coffee beans with peppery fresh radish that follow through on the palate. The wine has a remarkable soft velvety entry with a rather long aftertaste. The typical red fruit of Cabernet Sauvignon is well balanced between the soft ripe tannins and the well-disguised alcohol.

in the vineyard : Grapes were very healthy again and it was mainly attributed to the Cape Doctor (south easterly winds) during the ripening period. The berries were small due to well managed irrigation practices.

about the harvest: Grapes are handpicked at full phenolic ripeness to preserve the African sun in the fruit. Great efforts were made to measure phenolic ripeness and to compare it with previous harvests.
