in the vineyard : Climate: Mediterranean - Wonderful cool breezes coming from the Atlantic Ocean. With an average rainfall of 1100mm per annum.
Soil: Hutton and Clovelly

in the cellar : The wine was fermented in French oak barriques (60% new, 40% 2nd fill). It then went through 100% malolactic fermentation. Frequent battonage (stirring of the lees) was done during the maturation period of 10 months to enhance mouthfeel.
