in the vineyard : Area of Origin: Malbec from our Franschhoek Estate and Sangiovese from our Robertson Estate. Wine from Western Cape.
Vineyard: A trellised 12 year old Malbec vineyard planted on table mountain sandstone in Franschhoek and the Sangiovese planted with north/south row direction on deep well drained red clay/lime soil, in Robertson.

about the harvest: Malbec harvested on 7th February and the Sangiovese on 26th February and 4th March. All the grapes were harvested by hand, destemmed and left to cold macerate on the skins.

in the cellar : The Malbec for 4 hours and the Sangiovese for 10 hours, in horizontal stainless steel tanks at 12°C. After this short maceration the grapes were pressed and fermented separately, at a cool 13-15°C to ensure a fresh primary fruit bouquet and light pink colour.
