in the vineyard : Area of Origin: Wine of Origin Western Cape. Malbec from our Franschhoek Estate and Sangiovese from our Robertson Estate.
Vineyard: A trellised 14 year old Malbec vineyard planted on table mountain sandstone in Franschhoek and the Sangiovese planted with north/south row direction on deep well drained red clay/lime soil, in Robertson.

about the harvest: Malbec harvested on the 8th and the Sangiovese on 25th February.

in the cellar : The grapes were harvested, destemmed and left to cold macerate on the skins for 3 hours and 12 hours respectively, in horizontal stainless steel tanks at 12° C. After this short maceration the grapes were pressed and fermented separately, at a cool 13° - 15° C to ensure a fresh primary fruit bouquet and light pink colour.
