Mediterranean - rainfall 650mm per annum Vineyards situated on northern slopes and at the end of the valley hence slightly warmer conditions.
Soil
Deep red soils. A mixture of weathered granite and a small percentage of clay, Clovelly and Hutton structure.
Vinification/Maturing
Harvesting is done by hand. Fermented with yeast WE 372 at 28ºC. Malolactic fermentation took place in stainless steel tanks, then transferred into oak barrels for 18 months.
Tasing Notes
Colour : Deep and concentrated, colour of blackberries, rich in glass.
Aroma : Vanilla, beautiful complexity, with additional melted tones of wild game, blackberry.
Pallet : Full and fruity, touch of toasting, long finish and well balanced.
