ageing : This wine may be enjoyed now but can mature form a further 10 years.now but can mature form a further 10 years.

in the vineyard : Viticulturist: Pieter-Niel Rossouw
Origin: Paarl, Western Cape Situated on the foothills of the Hawequa mountain, overlooking Wellington.
Climate: Cold and wet winter, moderate spring which led to a good, extended ripening season.
Terroir: Weathered granite and sandy loam soils in the lower parts of the vineyards.
Vintage notes: Dormancy was extremely good for this growing season as it was cold and wet. During budding season, consistent rain, and cool south easterly winds helped ensure a good slow ripening period. Vines were more vigorous than previous vintages. This resulted in a vintage of well balanced grapes to deliver fruit driven wines with excellent structure. The age of the vines varies from 9 to 20 plus years.

in the cellar : Grapes are handpicked and meticulously sorted to ensure only the best fruit is used for vinification. Wine stay on skins for up to 35 days after fermentation for extra flavour. Each variety used in the blend is vinified on its own and only blended after it has matured for 12 months in mainly French oak barrels about 25% new. A further 11 months ensures an extensive maturation for the wine in the barrel, after which it is bottled. Released only a year later.
