in the vineyard : Pinotage vineyards planted on granite gravels in Firgrove, Stellenbosch and loamy Table mountain sandstone in Franschhoek. Vineyards produce around 6 - 8 tons per hectare.

about the harvest: Handpicked at optimum ripeness.

in the cellar : Fermented in open and closed fermenters with regular punch downs and pump overs. 12 Months maturation in new (30%), 2nd and 3rd fill French and American oak.
