ageing : Will mature well for 3 - 5 years.

in the vineyard : Vines planted in weathered granite type soil.

about the harvest: The Merlot was harvested at 25.5° Balling. Yield of 6ton/ha.

in the cellar : Fermented with NT 50 in red wine tanks and pumped over three times a day, until dry. Pressed lightly at 1 Bar. Underwent malolactic fermentation in the tank before going into French Oak barrels for 24 months. 100% new oak was used.
