about the harvest: The grapes were handpicked in the fresh hours of the early morning from a combination of Delaire mountain vineyards and other high altitude vineyards in the Stellenbosch region.

in the cellar : Extensive sorting of the grapes formed part of the quality management process.

The grapes were de-stemmed only, not crushed, to ensure gentle extraction of fruit flavours. This method was followed during fermentation and supported by punch downs. After basket pressing the wine, it went into French Oak barrels where malolcatic fermentation took place. The wine matured in these barrels for a further 12 months.
