Steenberg Black Swan Sauvignon Blanc 2012

This bold Sauvignon Blanc shows aromas of fynbos, freshly cut grass, passion fruit, lime and orange blossom. On the palate, the flavours follow up on the nose with notes of guava, hints of blackcurrant and gun flint. The wine is beautifully creamy with a full mouth feel, a great acidity and lingering aftertaste.

about the harvest: The Sauvignon Blanc is selected from three vineyards and harvested at sugar levels of 23° - 23.5°B.

Yield: 4½ t/ha

in the cellar : Twenty-four hour skin contact before pressing extracts beautiful mineral and green tones from the Sauvignon Blanc grapes. After pressing, the wine was settled for 48 hours and the clean juice transferred to fermentation tanks. The wine underwent a long cold fermentation in tank as well as 10% of the wine fermented in old 600l French oak barrels. Post fermentation the wine was kept on the lees for 7 months before stabilisation and bottling in November 2012.
