Steenberg Black Swan Sauvignon Blanc 2015

The Black Swan 2015 is fresh, crisp and displays remarkable fruit purity. It is a pale white wine with aromas of nettle, freshly cut herbs, subtle stone fruit, lime blossom and grapefruit sorbet. Notes of candied lemon and green herbs coincide with gun-flint minerality on the palate. All the flavours are enhanced by the vibrant acidity that adds to the freshness of the wine. The lees contact allows for a nuanced, yet opulent wine with a pronounced and long finish.

in the cellar : The Black Swan Sauvignon Blanc is a blend of the top two Sauvignon Blanc vineyards on Steenberg and is a selection of the best fruit from the vintage. The grapes were crushed / de-stemmed and left on the skins for 18 hours. The juice was then left to settle for 2 days before fermentation. A slow and cold fermentation resulted in a full, rich wine. The wine was kept on the lees for 8 months before being stabilised and bottled in December 2015.
