in the vineyard : 

Vine age: 15 years. These vineyards achieved top viticulture honours in 2007, winning a gold medal in the Vinpro Block Evaluation competition. A fantastic red wine vintage. The grapes reached optimum ripeness with ease, and the balance between yield and growth needed minimal interference.

about the harvest: 

in the cellar : 

Grapes were whole-bunch selected and hand harvested into 20 kg boxes at 24.8ºB. Further bunch selection took place before de-stemming. Fermentation occurred in 500 kg open-top fermenters using only wild yeast, with punch-downs by hand six times per day for maximum extraction.

Fermented grapes were manually loaded to avoid unnecessary pumping. Grapes were moderately pressed and moved to new French oak barrels for 18 months. No filtration took place before the wine was hand bottled.
