about the harvest: 
Only the best grapes were picked at 25.5° B.
Yield: 7.5 tons per hectare

in the cellar : The grapes were fermented in small open-top fermenters. Punch down by hand 6 times daily until fermented dry. Grapes were gravity fed to press. After pressing the wines underwent natural Mallolactic fermentation in barrel. Wine was natured for 24 months in a selection of new premium French oak barrels.
