Protea Cabernet Sauvignon 2012

Cassis and blackcurrant aromas with light floral and herbal nuances. Elegant and genteel in a toned, restrained way the wine is full of cassis, cocoa and tobacco leaf with a dry cranberry element. The grip is firm but gentle and the tannins are ripe and silky, reminiscent of a ballroom dancer in smooth flow. Soft textured but structured, the oak is deftly
handled and adds to its length on the palate.

about the harvest: The grapes are picked by hand in the early morning hours ,to ensure that the flavours stay intact.

in the cellar : Grapes are then transported to the cellar and transferred into 10 000L stainless steel tanks. Cold maceration takes place for 2 days to extend the extraction time on the skins, which is followed by Alcoholic fermentation. After fermentation the wine is drained from the skins and the skins are pressed. The free run wine and the press wine is matured in 225L and 500L 2nd and 3rd fill French oak and Stainless Steel tanks for approximately 12 - 14 months.
