Groot Constantia Shiraz 2000

Shiraz outstanding cultivar to work with wonderful deep ruby colour, loads of elegant fruit and flavours. Peppery nose, with a slight spicy character. Shiraz has been one of the best wines produced at Groot Constantia, in the 1970's it was considered to be the top wine from the cellar and in recent years it has been getting renewed attention.
Serving suggestions: Beef cooked in Red Wine, wild mushroom dishes & hard cheeses.

in the vineyard : Climate: Mediterranean - Wonderful cool breezes coming from the Indian Ocean as well as the Atlantic Ocean. With an average rainfall of 1100 mm per annum. Although the weather this year was much cooler compared to last year.

Soil Type: Clovelly and Glenrosa

about the harvest: The grapes were picked at 24º Balling.

in the cellar : Fermentation took place in the open tanks for 8 days, lots of pump overs. Matured in 35% New French Oak and the balance in 2nd and 3rd fill, for a period of 12 months in wood.
