Kleine Zalze Cellar Selection Cabernet Sauvignon 2014

A wine with a deep red colour with a classic multi-layered Cabernet nose. Notes of redcurrant and dark plum follow on the palate with subtle notes of spice and oak lifting the mid-palate.

ageing : A softer more elegant expression of Cabernet Sauvignon, however will mature nicely in the bottle of the coming years.

in the vineyard : The majority of the grapes harvested for this wine harvested from our well established vineyards on the Groote Zalze and Kleine Zalze farms, boasting Clovelly and Oakleaf soils with good water retention. The balance of the grapes, are sourced from a combination of north facing Durbanville, and south west facing Helderberg vineyards. The relatively wet growing season meant that no supplementary irrigation was needed and a good balance of fruit concentration and elegance was achieved with very little intervention. Owing to the fact that we had fairly uneven flowering careful attention was paid when it came to green harvesting to ensure even ripening of the fruit that remained.

about the harvest: All grapes were harvested early in the morning, and de-stemmed only.

in the cellar : One third of the wine was fermented in open concrete tanks and the balance, was fermented in stainless steel tanks. All batches received regular punch-downs or pump-overs during fermentation after which they were pressed and transferred to older barrels for malolactic fermentation. The wine was racked after malolactic and matured for a further 12 months in second and third fill French oak barrels and racked once before bottling.
