Kleine Zalze Cellar Selection Cabernet Sauvignon 2015

Very typical Stellenbosch Cabernet Sauvignon. Allot of dark fruit on the nose with spice, leather and pencil shaving. Bold and concentrated on the palate with chalky tannin and a long, lingering finish. This wine can be enjoyed now or can be aged for at least 10 years.

ageing : A softer more elegant expression of Cabernet Sauvignon, however will mature nicely in the bottle of the coming years.

in the vineyard : The majority of the grapes for this wine were harvested from our well established vineyards on the Groote Zalze and Kleine Zalze farms, boasting Clovelly and Oakleaf soils with good water retention. The balance of the grapes were sourced from a combination of north facing Durbanville, and south west facing Helderberg vineyards. The 2015 vintage was one to remember. We had enough rainfall during the 2014 winter and a perfect ripening period in 2015 with moderate to warm days and cool evenings.

about the harvest: All grapes were harvested early in the morning.

in the cellar : Half of the wine was fermented in traditional open fermenters and the other half in stainless steel tanks. We used a combination of “punch downs” and “pump overs” and introduced allot of oxygen into the fermenting wine. Tannins were extracted at the beginning of fermentation and finished with gentle and short “pump overs” not to over extract the wine. Gravity was used to separate the wine from the skins after fermentation and went through Malolactic fermentation in stainless steel tanks. The wine was aged in 300l French oak barrels for 14 months.
