about the harvest: From the vineyard the grapes are still harvested by hand from well-managed vines to produce excellent quality grapes.

in the cellar : In the cellar controlled fermentation takes place after destemming without crushing. Gentle pressing ensures a soft fruity wine. In the Barrel Cellar the wine is matured for 12 to 15 months in French and a few American Oak barrels producing subtle oak flavours and the level of maturation we require.
