ageing : While delicious now this wine will only improve over time and should reward careful cellaring for up to 10 years.

in the vineyard : Each block contributing its own, unique character to this wine. The relatively wet winter season meant that no supplementary irrigation was needed and a good balance of fruit concentration and elegance was achieved with very little intervention. Moderate day-time and cool night-time temperatures during the ripening period meant that we had very good flavour development in the fruit prior harvest.

about the harvest: Grapes were harvested from two blocks on our Groote Zalze farm. Grapes were hand harvested early in the morning.

in the cellar : Grapes were hand harvested early in the morning, de-stemmed and sorted before being transferred to stainless steel tank for fermentation. The perfect structure in the wine was achieved through a combination of open and closed pump overs and careful monitoring to ensure the best balance possible. Maturation took place for 19 months in 70% new French oak barrels.
