The 2000 vintage was exceptional for Cabernet Sauvignon on Overgaauw, producing healthy grapes with an abundance of fruit. This is a full-bodied wine with blackberry/mulberry aromas and hints of vanilla. The maturation in oak barrels adds to the complexity and future development of this wine. Probably one of our best Cabernet Sauvignons in the last decade. Big surrounding on the middle palate and soft grape tannins.

in the vineyard : Soil type: Deep Red Clovelly

about the harvest: The grapes were harvested at 24.8º Balling - 50% February and 50% March.
Yield per hectare: 6 tons

in the cellar : Length of fermentation: 3 weeks skin contact. After fermentation and extended maturation on the skins, the wine was racked into barrels to mature for 24 months in 100% new 225L French Oak.
