in the vineyard : Climate: Wet winters and warm summers, tempered by cool ocean breezes from over the mountain.
Soil: Weathered granite and clovelly from Paarl Mountain.

about the harvest: Grapes were harvested at 23Â° Balling.

in the cellar : Using wild yeast, they were then fermented down by 6Â° Balling. The juice were fortified to 17% alcohol/vol by using brandy distilled from Pinotage. This product is, therefore, 100% Pinotage.
