ageing : Will mature for 3-4 years, though eminently pleasing as a young wine.

in the vineyard : This unwooded wine is made from the same grapes as the Crocodile’s Lair/ “Kaaimansgat” Chardonnay. For most producers Chardonnay is one of the first grape varieties picked each year but in this case, because of its location, we were able to harvest after all our domaine grapes were in the cellar. The vineyards where the grapes are sourced rest at 700 meters above sea level and have reduced sunshine owing to the blind mountain valley just outside Villiersdorp. It arguably offers some of the latest ripening fruit in the Cape.

in the cellar : This wine was allowed to age on the primary lees for four months in a large stainless steel tank. It is crafted in a clean crisp style, unhindered by the taste of oak.
