in the cellar : No Oaking. Overnight skin contact and gentle pressing. January 2000 was an unusually long and hot month. The build-up to harvest was extremely nerve-racking as the Sauvignon Blanc prefers a slower, cooler ripening phase. The end result is a Sauvignon Blanc with a tropical approach, rather than the typically grassy style.
