about the harvest: Grapes from three Franschhoek vineyards picked at different stages of ripeness.

in the cellar : Grapes from three vineyards blocks are picked at different stages of ripeness. There is no skin contact. The grapes are then pressed and fermented in 100% stainless steel tanks using a variety of yeasts strains. Left on the fine lees to mature for three months with occasional stirring to develop a full rich body.
