about the harvest: Grapes from three Franschhoek vineyards picked at different stages of ripeness.

in the cellar : No skin contact, pressed and fermented in 100% Stainless steel using a variety of yeasts strains. Left on the fine lees to mature for three months with occasional stirring to develop a full rich body. Semillon matured for four months in older French oak barrels.
