Grapes are harvested at night when fully ripened, crushed, de-stemmed and cold-soaked on skins for about 8 hrs. Juice drawn off, settled, fermented. Kept on lees until bottling. Part of wine goes through malolactic.
Maturation: Both components un-oaked
