Mulderbosch Faithful Hound 2010

Lively in appearance, yet showing good concentration of colour, the 2010 Faithful Hound overflows with classic Claret aromas of ripe cassis, fragrant purple plums and spicy notes of sandalwood, star anise and white pepper. The full bodied, generous palate mirrors the juicy fruit aromas found on the nose. Flavours of dark chocolate and sweet cherry tobacco are restrained by a mineral chalky texture which tapers into a fine and lasting finish.

Game birds, Lamb; steaks; cream based pastas.

about the harvest: Grapes were handpicked.

in the cellar : The grapes were crushed into stainless steel fermenters where the must was cold soaked overnight and allowed to begin fermentation spontaneously. The grapes where then inoculated. The wine fermented dry on the skins, was pressed and underwent malolactic fermentation in tank before being blended and racked to barrel for maturation. A light fining and filtration was applied just before bottling.

Wood ageing: 18 months - 60% new and 40 % 2nd fill oak barrels (225 litre French oak)
