Deep red/purple in colour. Plums, black cherries, flowers and subtle spice on the nose. Juicy, concentrated yet elegant palate with black fruit and liquorice that follows.

in the vineyard : From 9 and 17-year-old trellised vineyards. A good fruit canopy was achieved as a result of intensive summer pruning.

about the harvest: Hand harvested.

in the cellar : 

After hand selection in the vineyard, the grapes were destalked and lightly crushed into static upright tanks. The juice was allowed to start natural fermentation at low temperatures and after a day inoculated with a selected yeast strain. Fermentation was done at 24° - 26° C and drawn off before dry. The wine spent 13 months in a combination of large oak vats and barrels, of which 15% were new.
