Sauvignon Blanc grape flavours play a major role in determining style and character of the Sauvignon Blanc wines. In this respect 'terroir' and special climate plays an important role. Grapes contain high levels of pirazine during the early ripening stage which convey a pronounced grassy character to the resulting wine. Towards optimum ripeness and under favourable conditions, pirazine becomes less prominent and is replaced by more fruity flavours. Nederburg Sauvignon Blanc is made in the more fruity style. Serve with tuna, quiches, veal, chicken and most seafood.
