in the vineyard : “The Old Road” Vineyard planted in 1971 on our Franschhoek estate beneath the mountain on deep well drained gravel loam soils, producing 4 tonnes per hectare.

about the harvest: Handpicked in February 2002.

in the cellar : After destalking the wine was pumped in to open fermenters with 3 punch downs per day. Fermented dry on the skins at 28ºC after 6 days. Malolactic fermentation followed and the wine was then transferred into new French and American Oak barriques for 12 months. A light egg white fining was added before bottling.
