in the vineyard : 'The Old Road' Vineyard planted in 1971 on our Franschhoek estate beneath the mountain on deep well drained gravel loam soils, producing 4 tonnes per hectare.

about the harvest: Handpicked in February 2003.

in the cellar : After destalking the wine was pumped in to open fermenters with 3 punch downs per day. Fermented dry on the skins at 25 - 28ºC after a week. Malolactic fermentation followed and the wine was then transferred into new French and American Oak barriques for 12 months.

Cooper: A selection of first and second fill barrels French and American barrels.
