about the harvest: Handpicked in mid-February 2001

in the cellar : After destalking the wine was pumped in to open fermentors with 3 pump downs per day. Fermented dry on the skins at 28ºC after 6 days. Malolactic fermentation followed and the wine was then transferred into new French and American Oak barriques for 12 months. A light egg white fining was added before bottling.
