Drostdy Hof Cape Red 2006

This wine is brick red in colour and shows an abundance of ripe fruit flavours including strawberry and mulberry on the nose, whilst the palate is dominated by a combination of strawberry and ripe berry fruit flavours.

This wine is the ideal accompaniment to game, pasta and poultry dishes.

The grapes were sourced from bush vines and low trellised vineyards in the Stellenbosch, Paarl and Worcester areas, ranging in age from 10 to 25 years. The vineyards are located at altitudes of 50-150m above sea level. Some of the vineyards grow in dryland conditions while others receive supplementary irrigation. All the vines were grafted on Phylloxera resistant rootstocks.

about the harvest: The grapes were harvested by hand during February and March at 24° Balling.

in the cellar : The juice was fermented on the skins for four days, and after pressing fermentation continued without skin contact. Upon completion of malolactic fermentation, 20% of the wine was matured in stainless steel tanks with French oak staves. The balance did not undergo maturation.
