Delheim Cabernet Sauvignon 2011

Deep purple-red in colour with blackcurrant, dark chocolate and hints of mint on the nose. On the palate there are flavours of dark plum, rolled tobacco and chocolate. This well-structured wine with fine, lengthy tannins will only improve with time.

in the vineyard : The grapes came from two vineyards situated on a south-easterly slope in the Simonsberg ward of Stellenbosch. Both vineyards consist of bush vines older than 20 years.

about the harvest: Grapes were hand picked

in the cellar : The handpicked grapes were fermented in upright fermentors with the aid of selected yeast strains. Temperature was maintained at 26-28°C. The wine was racked and returned once a day, followed by three pump-overs daily. The wine spent seventeen months in French oak barrels of which 35% was new.
